Coffee Freshness

Why "Fresh Off the Roast" Isn't Always Best: The Truth About Coffee Freshness

When it comes to specialty coffee, there is a common myth: the sooner you brew after roasting, the better it tastes.

In reality, coffee brewing is chemistry—and brewing beans immediately out of the roaster can lead to uneven, sour, or harsh extractions.

1. The Myth of Day-One Roasts

During the roasting process, thermal reactions build up significant amounts of trapped carbon dioxide (CO2) gas inside the cellular structure of the bean.

  • Days 0–7 (The Degassing Phase): When water hits extremely fresh, highly gassy beans, the rapid release of trapped CO2 creates turbulent bubbling (the "bloom"). This carbon dioxide physically blocks water from coming into contact with the coffee solubles, preventing an even extraction and introducing sharp, metallic, or aggressive acidity.
  • Resting is Essential: Giving roasted beans time to "degas" allows the internal pressure to stabilize, unlocking delicate floral, fruity, and caramel notes that are masked immediately after roasting.

2. The Freshness Curve: Finding the Sweet Spot

Think of coffee flavor like aging fine wine or resting a cooked steak—it needs time to reach peak harmony.

  1. Weeks 0–1 | Degassing Phase: High CO2, volatile extractions, unbalanced flavours.
  2. Weeks 2–6 | The Peak Sweet Spot: Gas levels stabilize. Soluble compounds extract evenly, delivering maximum flavor complexity, sweetness, and clarity.
  3. Weeks 7+ | Fading & Oxidation: Oxygen slowly degrades delicate aromatic oils, causing flavour notes to flatten.
