Overview

Delicate florals grace this excellent example from the producers of Santa María Ozolotepec in Oaxaca, Mexico.

With notes of green grape, chamomile and honey, a beautiful clarity emanates right through the cup, making way to gentle sweetness developing as the cup cools. Delightful as a pour over.

Composed of heritage Bourbon, Criollo Typica, Caturra, and Mundo Novo, Ozolotepec undergoes an 80-hour submerged natural pre-fermentation in washed coffee mosto before a meticulous balance of patio sun-drying and gentle mechanical finishing. The result is an intensely resonant cup that marries deep, fruit-forward sweetness with the refined structural elegance native to Oaxaca’s highlands.

Origin

High in the Sierra Sur of Oaxaca, coffee cultivation remains an act of ecological preservation maintained across generations. Here, smallholder Indigenous producers work parcels rarely larger than two hectares, nestled under dense agroforestry canopies that shelter the native ecosystem and regulate the mountain microclimate. While much of the coffee world transitioned to high-yielding hybrids, this landscape remains devoted to heirloom Typica and Bourbon lineages. Most notably, it is the cradle of Pluma—a protected Typica mutation grown strictly within shaded polyculture systems, renowned for its clarity, poise, and nuanced cup profile.

This lot traces back to Santa María Ozolotepec through a twenty-year relationship with Galguera Gómez, a three-generation family of producers, millers, and exporters. Their approach balances cultural continuity with technical rigor, supporting the community through guaranteed harvest stability, native reforestation, and progressive organic nutrition that enhances cup sweetness and soil resilience. Marking importer Que Onda’s fourth consecutive year supporting Ozolotepec, both lots were carefully processed under the supervision of Jesús Galguera Gómez at their Oaxaca City wet mill, capturing the quiet elegance and structured sweetness distinct to this origin.

The Artefact Specification

We spent the last year rebuilding this roastery from the ground up because the traditional 'artisanal' approach wasn't giving us the consistency we demanded. We’ve replaced intuition with Precision Science—transitioning to data-driven roasting and 100% paper-stream recyclable materials. At Artefact, we don’t guess. We measure.
