Overview

Classic Brazilian structure with a boozy lift, the extended fermentation adds boozy toffee apple sweetness. Great for straight espresso, engineered towards milk drinks.

Try this as a "Magic" - a double espresso (or ristretto) cut with milk in a 5oz cup, that's less than a flat white and more than a cortado.

Origin

Established in 1942 by the Muñiz family, Fazenda Nossa Senhora de Fátima sits at 950–1,150 MASL, leveraging a unique microclimate for high-density Arabica cultivation. Agronomic management centers on selective manual harvesting, ensuring picking is strictly calibrated to peak cherry maturity across varietals including Mundo Novo, Catuaí, Catucai, Rubi, Icatu, and Yellow Bourbon.

Post-harvest processing utilises natural, depulped cherry, and peeled natural techniques to deliver a clean cup defined by citrus and bright fruit notes, a rich body, and balanced sweetness and acidity.

Beyond agronomy, the estate operates under strict environmental protocols, featuring dedicated wastewater treatment, the successful reconstitution of 21 natural springs, and >30% total land area dedicated to biodiverse forest preservation, alongside continuous staff development and local sustainability initiatives.
